Today I’m taking my DIY to the kitchen! For those of you that know me, you know that I’m not much of a cook. I mean, I know how to cook, and I’m OK at it, but if a recipe has more than 5 ingredients I usually pass…unless it’s a special occasion or when it’s summer and I have time off from my teaching job 🙂
My main issue with cooking is not having all of the ingredients at hand when I want them. Wouldn’t it be nice to have everything pre-measured like in the cooking shows? I’d cook every day in that case!
I am a big fan of smoothies, though. They are easy. I can make them quickly and drink my breakfast on my way to work. Sometimes I will even have one for dinner! Smoothies are also a good way to get in a few servings of fruits and vegetables.
This smoothie has recently become a favorite of mine. I first had it at my sister’s house and I loved it. It’s light, tasty, and it only has 4 ingredients!Boom. It is NOT milk based, so that’s a plus too since milk and I don’t get along. You can add protein powder if that’s up your alley. And even if you add the protein, this yummy shake would meet my 5 ingredient criteria!
The ingredients keep well for more than week in the fridge. Who has time to go to the store for produce more than once a week? I certainly don’t!
PEACH COLADA GREEN SMOOTHIE
(2- 8oz servings)
2 C Spinach
1 C Unsweetened Coconut Water
2 C frozen green grapes
1C peaches (fresh or canned)
Blend the spinach, coconut water, and grapes, until smooth. Add peaches and blend again.
You can add ice if your grapes are not frozen, but I highly recommend you freeze them. It’s like adding sugary ice cubes! I have a Nutri Bullet that I use to make my smoothies. I love it. But, a regular blender will work too!
Well, there it is. Nothing to it, really, except the taste. The flavor of this smoothie will surprise you. It certainly did me.
