Hello friends! Today I want to share with you the recipe for my most favorite soup – Zucchini Soup! I love zucchini – it is one of my favorite vegetables – and today I want to show you how easy it is to put together this soup. My kids love it and I know your family will love it too!
Here we go! This is what you will need:
Ingredients:
5-6 large zucchini ( I mean like, large! If medium size, do about 8)
1 medium onion
2 garlic cloves, minced
3 TBLSP olive oil
2 32oz cartons of chicken broth
1 to 2 large tomatoes
2 tsp chicken base
1 tsp salt
1 bunch cilantro
Queso fresco and avocado for toppings (In our home, this is NOT optional!)
How to do it:
First cut up the zucchini in small bite size pieces,
Cut up the onion and mince the garlic, then add to the zucchini.
Mix everything really well. Add the olive oil and saute for 5 minutes. Take the tomato and some of the chicken broth and blend it all up in a blender. Then add to the zucchini with the rest of the chicken broth,
Here is a picture of the chicken broth I like to use, but any brand will be fine. If using a low sodium chicken broth, you will need to increase the amount of salt at the end.
Add the cilantro. Before chopping, get rid of the stems as shown above.
Don’t forget to rinse!

At this point add the salt and chicken base.
Here is the chicken base that I use. Organic and full of flavor!
Let the soup simmer until the zucchini softens- 10 to 15 minutes.
When finished, serve in a large bowl (trust me, you will need a large bowl- it is so delicious!) and top with more cilantro if desired, queso fresco, and avocado. Oops, I almost forgot to share a picture of the only cheese we buy in this household. Check it out:

And of course you cannot forget to add avocado. If you don’t like avocado, there is seriously something wrong with you. See a specialist. Lol!
